Homemade Nut & Seed Bars

Dry Ingredients:

2 cups rolled oats

2 cups almonds

1 cup pumpkin seeds

1 cup crushed pecans

4 pitted dates

Wet Ingredients:

1/4 cup coconut oil

1/4 cup maple syrup

Toppings:

1/2 cup melted semi sweet chocolate

Nut and Seed Snack Bars

  1. Ingredients:

    • 2 cups almonds

    • 1 cup pumpkin seeds

    • 4 dates, pitted

    • 1 cup oats

    • 1 cup crushed pecans

    • 1/2 cup semi-sweet chocolate

    • Coconut shreds (for topping)

    Directions:

    1. Blend Dry Ingredients: In a food processor or blender, combine the almonds, pumpkin seeds, and dates. Blend until the mixture is fine and fluffy.

    2. Combine with Oats and Pecans: Transfer the blended mixture to a large bowl. Add the oats and crushed pecans, and stir to combine.

    3. Mix Wet Ingredients: In a separate bowl, prepare your wet ingredients (like honey or maple syrup if needed) and mix until well combined.

    4. Combine Mixtures: Pour the wet ingredients into the dry mixture and stir until everything is evenly coated.

    5. Bake: Spread the mixture evenly in a baking tray and bake at 350°F (175°C) for 25 minutes.

    6. Melt Chocolate: About 20 minutes into baking, melt the semi-sweet chocolate in a microwave or over a double boiler.

    7. Add Topping: Once the baking time is complete, remove the tray from the oven. Drizzle the melted chocolate over the top and sprinkle with coconut shreds.

    8. Cool and Store: Allow the mixture to cool completely, then cut into bars. Store in an airtight container for a delicious snack throughout the week. Enjoy!
